Wine the nectar of the Gods! Today I met Jim at Cottage Winery in Cleveland, Georgia. A veteran who fillfulled his passion and opened a winery in the beautiful mountains of Georgia. This is a business run by a family who are dedicated to the quality of their wine. The scenery is magnificent and the wine very good! I was impressed with the passion of this vintner and the wine he was producing. Most of us never imagine the foothills of Georgia as being a great producer of wine however the opposite is true. Love those “Baby Doll Legs”, a beautiful rose wine that would complement a spicy shrimp or Puttenesca pasta dish.
Sauce ala Puttenesca
2 tablespoons EVOO
1 onion chopped
3-4 cloves of garlic chopped
1 tablespoon tomato paste
1 tablespoon capers rinsed
4 anchovy fillets chopped
1/2 cup chopped kalamata olives
1/4 teaspoon crushed red pepper flakes more if you like spice
1/2 teaspoon Italian seasoning
1 28 ounce can San Marzano Tomatoes squashed up
1 pound penne pasta cooked till aldente
Salt and pepper to taste
In a large pot heat the olive oil over medium high heat. Add the onion and saute until soft and lightly caramelized, about 6 minutes. Add the garlic and cook an additional 2 minutes. Add the tomato paste and caramelize lightly. Now add the tomatoes and the remaining ingredients and simmer until the sauce is thickened and slightly reduced, about 40 minutes. Adjust seasoning, to taste, cover and set aside. Add penne pasta to the pan and toss for 1 minute. Place in a large bowl drizzle with fresh EVOO
and fresh grated pecorino cheese!
