B-b-cue

When in the south bar-b-cue is king or maybe queen! There is Carolina style, Texas style, Kansas City style, tomato, vinegar and white. You can have pulled pork, brisket or ribs. There are many sides including traditional ones such as cole slaw, baked beans, collard greens and potato salad. On every exit on every interstate in the south there is a bar-b-cue joint and I love the pig! Whenever I am here visiting family we have bar-b-cue, either a local familiar spot or an out of the way place on the interstate. However I must say that my favorite pulled pork is Italian style with fried long hot peppers and extra sharp provolone cheese, yum! Just like southern bar-b-cue the meat is slow roasted and succulent, marinated with garlic, rosemary, EVOO, salt and pepper. When finished the meat is tender, juicy and full of flavor. Pulled gently apart, placed on an Italian roll and dressed with cheese, fried long hot peppers, and or even broccoli rabe it is a masterpiece! Pork, flavorful, succulent and tender, southern or Italian; enjoy your favorite!

Italian Roast Pork

5-7 lb pork shoulder/ butt ( you can do boneless)

7-9 cloves of garlic chopped fine

3 tablespoons chopped fresh rosemary

1/4 cup EVOO

1 tablespoon of salt 

2 teaspoons ground black pepper 

Place the pork fat side up in a roasting pan. Score the meat deeply  all around to make pockets for the garlic paste.

In a mortar or in a shallow bowl combine the garlic, rosemary, oil, salt and pepper into a paste. Smear the paste over the pork filling the pockets. Cover the meat with plastic wrap and refrigerate overnight.

Remove pork from refrigerator, remove plastic wrap and preheat oven to 275. Place roast in the oven and cook for 7 hours. Remove from oven, transfer to platter and tent with foil for 30 minutes. Gently pull the meat apart, don’t eat too much it is delicious! Serve with good Italian rolls, extra sharp provolone, fried long hots and sautĂ© broccoli rabe. Accompanying this great sandwich is either a fabulous Zinfindel like Joel Gott from California or a great local beer, Sophisticated Lady from Cape May Brewery.
