Pasta e Piselli

Piselli or peas are one of my favorite vegetables! I have had a love affair with peas since I was a child, in fact it was one of the few vegetables I would eat. I knew peas were ready and available so bright an early on Saturday morning I was off to the Collingswood Farmers Market. I was dizzy with delight, so many fruits and vegetables to choose from however, I had a strategy. There are a large number of vendors and so I walked from vendor to vendor scoping out each one. After I had made one complete trip around the market I was ready to do business. I decided I would buy a peck of English peas from Viereck farms. Of course I purchased tomatoes, green beans, corn, blueberries and the most delicious raspberries from Brookeberry Farms! Then home I went to shuck peas! As I was shucking I thought fondly of my mother-in-law who would often make as she called it, Piselli e Pasta. A simple peasant dish of sauted onion and peas in olive oil over pasta with a sprinkle of grated cheese. However I decided to change it up a bit. I also love sage in browned butter over pasta, so why not with peas? The result was amazing and I can not wait to make it again, but not so much shucking the peas!

4 ounces of linguine fini broken in half

2 tablespoons of butter

1 tablespoon EVOO

6 sage leaves roughly chopped   I picked them fresh from my garden 😉

1 small onion chopped

1 1/2 cup fresh peas     You can use frozen

2-3 tablespoons grated cheese  Use your favorite Pecorino or Parm

Start a large sauce pan of water for the pasta, cook according to package directions. Reserve a cup of the pasta water for the sauce.

In a a large saute pan over medium high melt the butter with the EVOO and cook until the butter begins to brown. Add the sage leaves and cook about 2 minutes, then add the onion and cook until the onion is soft. Finish by adding the peas cooking until they are just tender. Add the cooked pasta and toss together. Turn off the heat and add some pasta water if needed. Tranfer to a beautiful bowl, sprinkle with cheese and a drizzle of EVOO. Mangia!
