The garden is done; the leaves are bursting with color and yet the temperatures are reminiscent of late spring, early Summer. These are days that make me forage in my freeze for something from the summer harvest. There nestled in the confines of my freezer, a plastic bag wrapped tightly with little sweet green peas. Yes! the beginning of a fresh light sauce over my new favorite, LeVeneziane corn pasta. As many of us, I am in a constant battle with “my numbers”! Whether it be weight, cholesterol, sugar, you name it, I am in the fight. To top it off the bombardment of plans, that are the miracle which will change your life. No sugar, no wheat, no meat, just rabbit food and bird seed is on the menu! Well there are a few things I just can not give up and pasta is one. Fortunately, I was introduced to this delicious corn pasta from Italy and you’d be hard pressed to taste the difference from a good imported semolina pasta. With a few items from the pantry, fridge and my summer gems, I will bask briefly in thoughts of summer on this beautiful November Indian Summer Day!
1/2 bag of LeVeneziane Fettuccine
A large pot filled with water, bring to a boil, add salt and pasta. Cook 7 about minutes
For the sauce:
1 clove of garlic finely chopped
1 medium onion chopped ( or scallion if you happen to have them)
6 – 8 cremini mushrooms chopped (I always have mushrooms in my fridge)
1 fresh tomato chopped (you can use grape tomatoes)
1 cup peas (frozen peas work great) rinse under water to defrost slightly
1/2 cup good chicken stock
2 tablespoons of EVOO
salt and pepper to taste
grated cheese Parm or Pecorino your choice
Heat a medium saute pan, add EVOO slightly, then add onion and mushrooms. Saute for about 3-5 minutes add garlic, cook for a minute more. Add peas and tomato, salt lightly and continue to saute for about 4 minutes. Add chicken stock and reduce heat to a simmer. Taste for salt and pepper. In the meantime cook the pasta for about 7 minutes. Add pasta to the saute pan with vegetables, toss together. Place in a large serving bowl and top with cheese. Add a glass of Vino and Enjoy!
