What do you do when you have those few overripe bananas that no one wants to eat! You can freeze them for a smoothie, use them for banana bread or better yet my recipe for chocolate banana cake under my earlier post “Dessert of Breakfast”. However hold on! You can use them in this great recipe I was given by my daughter. We are not sure where the original recipe came from however, she makes them for my grandchildren as well as herself. Best of all they are sugar free, gluten free and healthy!
Preheat your oven to 375
In a medium bowl mash your bananas, I used two. Add a cup of quick oats, I like Bob’s Red Mill organic oats, 1/3 cup of chopped walnuts, 1/4 cup melted coconut oil, a teaspoon of vanilla and cinnamon. Line a baking sheet with parchment and drop the mixture on the sheet. I used a small ice cream scoop. Bake at 375 for about 15 minutes. Remove and cool.
You could add raisins or what ever you prefer. Make it your own, Go Bananas! I added chopped dark chocolate and a 1/4 cup of shredded coconut.
A great snack or a breakfast treat!
